One, obviously his clothes. Two, he is able to ride Epona after getting older. Three, he can use many more weapons like the Fairy's Bow and that kind of stuff. Four, when he uses the Hylian Shield when young, he can only squatt and use it. When older, he can actually use it properly. Five, he can access more dungeons then he could when he was little.
